5 oz almond flour
2 oz cornflour
1\4 tsp bicarb, 1\4 tsp salt
1\2 teaspoon finely chopped basil
1 oz maple chunks
2-4 oz maple syrup
Pre-heat oven to 180C, Gas 5. Sift flour, cornstarch, salt & bicarb into a bowl. Mix with a spoon, flattening any lumps. Add basil and maple chunks, stir, should be like breadcrumbs. Then moisten as for scones or shortbread except instead of using something sane, use maple syrup, until it be enough — that is, until it’s all stuck together into a workable dough. Make it into balls about cookie size, flatten them, and put them on a cookie tray. Bake for 12 mins until golden brown, cool, eat.
These are the holy grail of cookies because they’re vegan, gluten free, easy to make, and yummy.
