Scones

Scones are another of those things that have mystique but are really pretty easy.

Sift 8oz SR flour into a mixing bowl. Add 4oz butter or marge and mix with magic pastry fork. Add 2 oz vanilla sugar and 2oz sultanas or raisins if wanted. Bind with an egg plus an extra egg-white.

You can roll them out and cut them neatly, or you can shape them with your hands into balls, or you can put the whole thing as one whole thing and bake it together and cut it up later, and in that case it’s a North of England thing and you can call it a “hinny”, or “singing hinny”.

Bake for 12 minutes at 180C. Serve with butter, jam, and cream.
