Spanakopita (really easy)

Saute two onions or 3 big shallots or 6 little shallots, in a little olive oil. Add 200g of chopped spinach, frozen works fine, and stir for a few minutes until mixed and wilted. In a separate bowl beat 2 eggs, a big handful of chopped feta (100g?) and about the same of ricotta, with black pepper. Mix the green glop into the egg/cheese glop.

Pre-heat oven to 200C.

Take a piece of thick filo pastry, and put a dollop of the mixed glop into the centre. Fold the pastry around it, as for folding a tortilla or a Peking Duck pancake. Place the parcel on a baking sheet. Repeat until out of glop. Bake for 15 minutes. Reheats fine. That’s all there is to it.

I’ve tried adding mushrooms and chicken at different times, and while either is fine they’re not necessary — spinach and cheese and onions is all you need.
