2 oz almond milk
2 oz olive oil
4 oz vanilla sugar
2 very ripe bananas, mashed to a smooth pulp
6 oz self raising flour
Big handful of blueberries, blackcurrants or other berries, frozen is fine
Demarara and oats for topping — like a tablespoon of each
Pre-heat oven to 180, gas 5. Put cake cases in patty tins.
Beat oil, almond milk and sugar with a whisk until mixed. Add mashed bananas, whisk. Fold in flour.
Divide half the mixture between 12 cake cases in patty tins. Put half a dozen or so berries on top of the mix in each case. Then put a spoonful of mixture on top of the berries in each case. It doesn’t matter if it doesn’t entirely cover them. Then sprinkle the top of each cake with demarara and oats. Bake in the top of the oven for 20 mins.
